BUTTERSCOTCH COOKIES 
1/4 c. butter
1/4 c. shortening
1/3 c. sugar or sugar substitute equivalent, suitable for baking
1/3 c. brown sugar or brown sugar substitute, suitable for baking
1/3 c. chopped nuts
1 egg
1 1/3 c. flour
3/4 tsp. baking soda
3/4 tsp. vanilla

Melt shortening and butter. Add the sugars or sugar substitutes and egg; mix well. Sift flour and soda together and stir into the shortening mixture. Add vanilla and nuts. Roll on wax paper. Make dough into a roll and chill. After chilling cut roll into slices. Bake on an ungreased cookie sheet, at 375 degrees for 10 minutes.
