CRANBERRY TORTE CAKE | |
2 1/4 c. flour 1 c. sugar 1/4 tsp. salt 1 tsp. baking powder 1 tsp. baking soda 1 c. chopped nuts 1 c. chopped dates 1 c. raw cranberries Grated rind of 1 orange 2 beaten eggs 1 c. buttermilk 3/4 c. oil Stir together flour, sugar, salt, baking powder and soda. Add nuts, dates, cranberry, and orange rind to flour mixture. Blend in eggs, buttermilk, and oil until well mixed. Bake in greased tube pan at 350 degrees about 1 hour. Let stand until warm. Mix 1 cup orange juice and 1 cup confectioners sugar; pour over warm cake. Drain off and pour over cake again until all glaze is absorbed. When cold, wrap in foil and store in refrigerator 24 hours. Also freezes well. |
