CAPE COD CRANBERRY CAKE | |
1/3 c. butter 1 c. sugar 2 eggs 1/2 tsp. salt 1/4 c. milk 1 1/2 c. flour 1 1/2 tsp. baking powder 1 c. cranberries (fresh or frozen) 1 tsp. vanilla Beat butter and sugar mixture, add eggs. Mix well and add dry ingredients alternating with milk and vanilla. After completely mixed add cranberries. Bake in greased square cake pan 25 to 30 minutes in 350 degree oven. Topping for 4: Beat 2 egg yolks add 1/4 cup sugar, 1/2 teaspoon vanilla. Set aside. Beat 3 egg whites stiff and add 1/4 cup sugar and mix. Then blend into 2 egg yolks and serve on hot cake immediately. Topping will be like yellow whipped cream. |
