MEXICAN MEAT LOAF 
1 can Rotel tomatoes
Chopped onion
Chopped green pepper
1 egg
2 c. crushed tortilla chips
1 1/2 or 2 lbs. ground beef
Salt and pepper
Thick slices Mozzarella cheese

Mix all ingredients above, except the cheese. Put half of meat in loaf pan. Place thick slices of cheese on top of meat, then place remaining meat on top of cheese. Try to seal the sides. Bake at 350 degrees for 1 1/2 hours or until done.
