CRUNCHY ROMAINE SALAD | |
DRESSING: 1 cup sugar 3/4 cup olive oil 1/2 cup red or apple cider vinegar 1 tbsp. soy sauce salt and pepper, to taste Combine dressing ingredients in a jar or salad dressing bottle and shake until blended. This will keep about 2 weeks or so in refrigerator. SALAD: 1 head romaine lettuce, torn into pieces 1 bunch broccoli, coarsely chopped 4 green onions, chopped 1/4 cup (1/2 stick) unsalted butter 1 pkg. ramen noodles 1 cup chopped pecans or pine nuts Put romaine, broccoli and onions in a big salad bowl. Melt butter in skillet and brown ramen noodles and pecans until slightly brown. Let cool. Add noodles and pecans into the salad. Toss with dressing to coat. Submitted by: Sandy McGlothlin |
