POTATO ONION SOUP 
1 onion, chopped
2 tbsp. butter
6 c. milk
1 tbsp. salt (or to taste)
1 1/2 c. instant mashed potato flakes

Saute onion in butter until tender. Stir in milk; add salt and pepper to taste. Heat just until mixture begins to boil. Remove from heat, then stir in potato flakes. Yields 6 servings. Serve while hot.
