CARROT CAKE 
1 can mandarin oranges
1 c. coconut
2 c. sugar
3 c. flour
1/2 c. oil
2 tsp. vanilla
1 c. walnuts
2 1/2 tsp. baking soda
2 1/2 tsp. cinnamon
2 1/2 tsp. nutmeg
2 c. grated carrots
3 eggs

Mix all ingredients together in a large bowl.

Bake at 350°F for 1 hour. Use a 13 x 9-inch pan.

Icing:

8 oz. cream cheese
2 tsp. butter
1 tsp. vanilla
1 box 10x powdered sugar

Mix and cover over cake.
