OLD FASHIONED CARROT CAKE 
3 c. flour
2 tsp. cinnamon
1/2 tsp. ginger
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. vegetable oil
1 c. firmly packed brown sugar
3/4 c. sugar
3 lg. eggs
2 tsp. vanilla
4 lg. carrots, grated
1 (20 oz.) can crushed pineapple, unsweetened, undrained
1 c. chopped walnuts
1 c. raisins

Sift together dry ingredients (first 6 ingredients) and set aside. Beat together oil, brown sugar, white sugar, eggs and vanilla in a large bowl with wooden spoon until thoroughly combined and smooth. Stir in flour mixture and beat until smooth. Add all other ingredients and stir well until well mixed.

Pour into greased and floured 9 x 13 inch pan and bake at 350 degrees for 1 hour and 30 minutes. Let cool in pan and frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese
1/2 stick butter
2 c. confectioners' sugar
2 tbsp. orange juice & some of the grated rind
1 tsp. vanilla

Beat until spreadable and frost cake after cooled.

This cake is wonderful and moist. I have been looking for this recipe for quite a while, it was one of my family's favorites and I lost it several years ago ....made it for his 30th and now I am going to make it for my husbands 64th birthday.

This one has to be the best old fashion carrot cake. I am not proficient at all and oh well every one loved it. It has become legendary! even if you choose any other recipe, to me, great part of the success is the frosting with the ORANGE touch. Irresistible!
