OLD FASHIONED CARROT CAKE | |
3 c. flour 2 tsp. cinnamon 1/2 tsp. ginger 1 1/2 tsp. baking powder 1 1/2 tsp. baking soda 1/2 tsp. salt 1 1/2 c. vegetable oil 1 c. firmly packed brown sugar 3/4 c. sugar 3 lg. eggs 2 tsp. vanilla 4 lg. carrots, grated 1 (20 oz.) can crushed pineapple, unsweetened, undrained 1 c. chopped walnuts 1 c. raisins Sift together dry ingredients (first 6 ingredients) and set aside. Beat together oil, brown sugar, white sugar, eggs and vanilla in a large bowl with wooden spoon until thoroughly combined and smooth. Stir in flour mixture and beat until smooth. Add all other ingredients and stir well until well mixed. Pour into greased and floured 9 x 13 inch pan and bake at 350 degrees for 1 hour and 30 minutes. Let cool in pan and frost with Cream Cheese Frosting. CREAM CHEESE FROSTING: 1 (8 oz.) pkg. cream cheese 1/2 stick butter 2 c. confectioners' sugar 2 tbsp. orange juice & some of the grated rind 1 tsp. vanilla Beat until spreadable and frost cake after cooled. |
