PUMPKIN BARS 
2 c. sugar
4 eggs
1 c. oil
2 c. flour
2 c. pumpkin
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1/2 to 3/4 c. raisins, optional
1/2 c. walnuts, optional

Mix ingredients together. Pour into 10x15 pan. Bake at 350 degrees for 25 minutes. Frost with Cream Cheese Frosting when cool.

NOTE: A 9x13 pan will make a thicker bar.

CREAM CHEESE FROSTING:

3 oz. pkg. cream cheese
3/4 stick butter
1 tbsp. cream or milk
1 tbsp. vanilla or 1/2 tsp. almond extract
1 3/4 c. powdered sugar

Soften cream cheese. Blend all ingredients together and spread.
