VEGETABLE BEAN CURRY 
1 tbsp. butter
1 tbsp. oil
1/2 med. onion, chopped
1 sm. tart apple, peeled, cored and diced
1 lg. clove garlic, minced
2 tsp. curry powder
1 lg. carrot, diced
1 c. string beans, diced
1 c. summer squash, green or yellow, diced
1 c. garbanzo beans, cooked
1/4 tsp. cumin powder
1 1/2 c. vegetable broth (bouillon cubes)
1 tsp. honey
1 tsp. lemon juice
Salt and pepper
Cooked brown rice
Raisins
Peanuts

In a heavy bottom pot, heat butter and oil. Saute onion, apple, and garlic with curry for 5 minutes. Add carrot, beans, quash, garbanzo beans and cumin. Combine broth with honey and lemon juice. Pour over vegetables.

Simmer mixture for 15 minutes, covered. Add salt and pepper to taste. Serve over brown rice garnished with peanuts and raisins. Add additional curry if desired.
