SQUASH CASSEROLE 
2 lbs. squash, stewed
Salt and pepper to taste
1 stick butter
1 onion, chopped
1 c. Ritz cracker crumbs
1 c. mild or med. Cheddar cheese
1 egg
1/2 c. milk

Cook squash until tender and cream. Add salt, pepper, butter, onion, cheese and cracker crumbs. Beat egg and add milk. Add to squash mixture. Bake in ungreased casserole at 350 degrees for 30-40 minutes. You can sprinkle top with cheese or cracker crumbs to garnish.
