SCANDINAVIAN TOAST 
1 c. butter, softened
1 1/4 c. sugar
2 eggs
1 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
3 3/4 - 4 3/4 c. flour
Flavoring - 1 tsp. vanilla or cardamom or almond

Cream sugar and butter. Beat in eggs. Mix 3 3/4 cups flour, soda, cardamom, salt and add alternately with buttermilk. Stir in enough more flour to handle dough.

Divide in three. Shape on greased cookie sheet in 3 rows. Bake 30 minutes at 350 degrees. While warm cut in 1/2 inch slices. Put on greased cookie sheet, 300 degree oven, about 10 minutes each side. Cool.
