HAM AND ARTICHOKE PASTA | |
10 c. water 1 pkg. frozen artichoke hearts 1 tbsp. olive oil 6 oz. ham, cut into chunks 8 cherry tomatoes, halved 1/2 c. sliced green onions 1/3 c. sliced black olives 1 pkg. (8 oz.) fresh fettucini 3/4 c. milk 1/2 c. mayonnaise 1/2 c. grated Parmesan cheese Boil water. Thaw artichokes under water. Heat oil in large skillet, add ham and cook 5 minutes. Stir in artichokes, tomatoes, green onions and olives. Reduce heat. Add fettucini to water and boil 5 minutes. Mix milk, mayonnaise and Parmesan cheese in 2 cups measuring bowl until blended. Stir ham and vegetables in skillet while slowly adding mayonnaise mixture. Stir until sauce is thickened and hot. Drain fettucini. Serve with sauce ladled over it. |
