1 1/2 c. sugar 2 c. plain flour 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. ground allspice 1/2 tsp. ground cloves 1 tsp. vanilla flavoring 1 c. vegetable oil 3 eggs 1 c. buttermilk 1 c. fig preserves 1/2 c. pecans or walnuts Combine dry ingredients in large bowl. Add oil, eggs, buttermilk and vanilla. Beat well, then add fig and pecans. Cook in tube pan 350 degrees 1 hour 15 minutes. Cool. GLAZE: 1/4 c. butter 1/2 c. sugar 1/4 c. buttermilk 1/4 tsp. baking soda 1 1/2 tsp. cornstarch 1 1/2 tsp. vanilla flavoring Combine first 5 ingredients. Bring to boil; cool. Stir in vanilla. Pour over cake while still in pan. |
