CREAMED ENCHILADAS 
1 pkg. 12 tortillas
1 lb. ground beef
1 (10 oz.) can enchilada sauce
1 (10 oz.) can tomatoes with green chilies
1/2 lb. grated Velveeta cheese
1/2 lb. grated Longhorn Cheddar cheese
1 (13 oz.) can evaporated milk

Preheat oven to 325 degrees. Brown ground beef for about 10 minutes, then add chopped onion and can of tomatoes with green chiles. Simmer about 15 minutes.

Tear the tortillas into quarters. In a greased casserole dish (or a 9 x 13 pan), place a layer of the torn tortillas on the bottom. Then put a layer of 1/2 of the ground beef mixture, followed by a layer of the Velveeta cheese and Longhorn cheese which have been mixed together. Repeat the three layers again.
