SOUR CREAM TURKEY ENCHILADAS 
SAUCE:

1/2 c. cottage cheese
1 c. turkey broth
1 c. diced turkey
1/2 c. sour cream
1/2 c. diced green chiles
1/4 tsp. salt

FILLING:

1 c. grated sharp cheese
1/2 c. chopped onion
1/2 dozen tortillas

Combine ingredients for sauce and heat until smooth. Mix cheese and onions and set aside. Steam tortillas until soft. Fill 1/2 tortilla with cheese and onions; pour a little sauce in and fold other half down. Repeat with remaining 5 tortillas. Pour remaining sauce over top and bake 20-30 minutes at 350 degrees. Serve hot.
