PINEAPPLE PECAN CAKE | |
Cake: 3 c. flour, sifted 2 c. sugar 3 eggs, slightly beaten 2 tsp. baking soda 1/2 tsp. salt 1 (20 oz.) can crushed pineapple, undrained 1 tsp. vanilla 3/4 c. chopped pecans Preheat oven to 350°F. Mix together flour, sugar, eggs, soda and salt. Add pineapple, nuts and vanilla. Mix well. Pour into 9 x 13 greased and floured pan. Bake 20 to 30 minutes. Topping: 1 (8 oz.) cream cheese, softened 4 tbsp. butter 1 tsp. vanilla 1 lb. powdered sugar Beat with mixer until fluffy. Spread on cooled cake. Sprinkle with 1/4 c. chopped pecans. |
