HEARTY CHEESE SOUP 
1 lb. sharp cheese
1/2 c. finely diced onion
1/2 c. finely diced carrots
1/2 c. finely diced celery
1/4 c. butter, melted
1/4 c. all-purpose flour
1 tbsp. cornstarch
4 c. milk
4 c. chicken broth
1/2 tsp. baking soda

Saute onions, carrots and celery in butter until tender. Add flour and cornstarch. Stir until smooth. Cook milk and broth. Stir in the onions, carrots and celery. Then add cheese. (Stir in soda right before you add the cheese.)
