2 med. beets
1 egg
2 oz. bread crumbs
butter for sauteing
Sauteed onions, for garnish

Boil beets in water until tender. Peel and cut into 1/4" slices. Dry and dip in beaten egg, then into bread crumbs. Saute until crisp and brown. Serve with onion.
