JAMAICAN SPICE CAKE 
1 cup (2 sticks) butter
1 cup sugar
3 eggs
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. allspice
1/3 cup dark rum (Myers's)
1/2 cup molasses
2 cups unsifted all-purpose flour

Preheat oven to 350°F.

Cream butter in bowl. Gradually beat in sugar. Beat in eggs, one at a time. Add baking soda, cinnamon, ginger and allspice. Combine rum and molasses.

Add flour alternately with the rum mixture, beginning and ending with flour. Mix well until batter is very smooth.

Bake at 350°F for 50 minutes, cool 10 minutes.

This cake was excellent. It was moist, and spiced just right. I am surprised no one else has made a comment to just how delicious it is. It is simple and one of those no fail recipes that does not need any altering. I used a 9x13-inch pan.

Thanks SM - for the tip on size pan. I was going between the idea of a Bundt pan, etc., A size pan already tried definitely works for me...
