BLENDER BROCCOLI SOUP | |
1 (10 oz.) pkg. frozen chopped broccoli 1/2 c. chopped onions 1 1/3 c. condensed chicken broth 2 tbsp. butter 2 tbsp. flour 1 tsp. salt 1/2 tsp. basil (crumbled finely) 1/8 tsp. white pepper Sliced almonds Combine broccoli, onions and broth; heat to boiling and simmer 5 minutes. Turn into blender jar; blend smooth (be sure you vent blender so not to get burned). Melt butter in soup kettle; blend in flour. Stir in broccoli mixture, cream and salt, basil and pepper. Heat slowly, just to boiling. Simmer 1 minute, stirring. Top each serving with almond sprinkles. Serves 4. |
