SPICED BAKED FISH 
2 1/2 lbs. filet of cod
1 tsp. lemon pepper
1 tsp. seafood seasoning (Old Bay)
1 can Italian seasoned stewed tomatoes
1 tsp. cayenne pepper
1 c. rice

Preheat oven to 325 degrees. Cook rice as normal. Place washed fish in a medium sized casserole dish. Season on both sides with lemon pepper and seafood seasoning. Cover fish with stewed tomatoes. Sprinkle cayenne pepper over tomatoes. Bake for 20 to 25 minutes. Serve warm over rice for a delicious "lo-cal" meal!
