WHOLE WHEAT COTTAGE CHEESE ROLLS 
3 3/4 c. whole wheat flour
2 pkgs. dry yeast
1/2 tsp. baking soda
1 1/2 c. cottage cheese (creamed style)
1/2 c. water
1/4 c. brown sugar, packed
2 tbsp. butter
2 tsp. salt
2 eggs

Thoroughly stir together 1 1/2 cups flour, yeast, soda. Heat together cheese, water, sugar, salt, butter just until warm, stirring to melt butter. Add to dry mixture. Add eggs, beat on low speed 1/2 minute. Beat on high speed 3 minutes. By hand add enough remaining flour to make moderately stiff dough. Knead until smooth 8-10 minutes. Place in greased bowl. Let nearly double, punch down. Shape into 24 rolls. Place in greased muffin tins, let nearly double. Bake at 375 degrees for 12-15 minutes.
