JEFF'S AWESOME MUSHROOM OMELET 
2 eggs
2 tbsp. milk
1/2 cup shredded cheddar cheese (I use Cabot Vermont sharp)
5 olives, diced
2 cloves garlic, diced
1/2 cup mushrooms, diced
chopped parsley, for garnish

Mix eggs, milk, shredded cheese, olives, garlic and mushrooms in a bowl. Add parsley.

Make sure frying pan is buttered or spray with non-stick cooking spray (Pam). Let pan heat up, and cook the omelet until the cheese is melted and the bottom is lightly brown.

Variation: Diced ham can be added for higher levels of deliciousness, or the olives can be replaced with jalapenos.
