PANSY COATES' CLAM FRITTERS 
Pansy Coates was the wife of Capt. Stanley Coates of Poquoson, VA. He commanded a large fleet of fishing vessels in the Chesapeake Bay, and Pansy was the best cook in the county. I had the pleasure of knowing them and their children. Thanks, and enjoy. Capt. C. B. Blair.

2 small cans Gortons chopped clams (pour off the clam juice from one of the cans)
1 very large sweet onion. chopped finely
1 cup all-purpose flour
2 eggs
1 heaping tablespoon baking powder
2 tablespoons Tabasco sauce

Mix all together, and spoon into 1/2-inch medium hot cooking oil. Brown on both sides when done remove and blot with paper towel. Serve hot with Tabasco sauce to individual taste.
