VEGGIE-FRUIT SALAD 
2 c. thinly shredded cabbage
1/2 c. shredded carrot
1 sm. apple, diced and unpared
1/2 c. cantaloupe, diced
1 c. green grapes
2 stalks celery, thinly sliced
1/2 c. shredded fresh spinach
Alfalfa sprouts
Toasted sunflower seeds

Toss dressing with cabbage, carrot, apple, cantaloupe, grapes, celery, and fresh spinach. Top with sprouts and/or sunflower seeds if desired.

LEMON DRESSING:

2 tbsp. lemon juice
2 tsp. honey
1 tsp. Dijon mustard
1 tsp. minced onion (instant)
1/4 tsp. salt
1/4 tsp. poppy seed
3 tbsp. vegetable oil

Mix first 6 ingredients in bowl and whisk in the vegetable oil.

A very cool refreshing salad in summer.

Yum! I doubled the dressing and put in a few extra grapes and apples, also tossed in slivered almonds. My cabbage was grated but I think shredded would have been better. Everyone loved it - sweet and pungent and healthy.
