COQUILLE 
6 tbsp. butter
3 tbsp. flour
1 tsp. salt
1/8 tsp. white pepper
2 c. light cream
1/2 lb. scallops (slice if sea)
1/4 c. onion, chopped
1/4 lb. mushrooms
1/2 lb. cooked shrimp
1/2 lb. crabmeat
2 tbsp. cooking sherry
3 tbsp. bread crumbs
Serve on: rice or noodles

Melt 4 tablespoons butter, blend in flour, salt, pepper and add cream; stir until thick.

Melt remaining butter in skillet, saute mushrooms then scallops and onions (use resultant sauce as part of white sauce liquid). Combine everything (don't forget sherry and top with crumbs). Bake at 400 degrees until bubbly. Serve on noodles or rice. Serves 4.
