3 med. sized cooking apples, peeled, cored & sliced Grated rind of 1 lemon 1/3 c. sugar 7 tbsp. butter, softened 7 tbsp. sugar 2 eggs 1 tsp. vanilla 3/4 c. sifted all purpose flour Place apple slices in a 9" pie plate. Add lemon rind and 1/3 cup sugar. To prepare the pudding, beat the butter and sugar together until light and creamy. Fold in the eggs and vanilla alternately with the flour. Spoon the mixture over the apples. Bake in a 375 degree oven for 35 minutes. |
