CUSHAW PIE 
1 1/2 c. cushaw (that has been cut & cooled)
2 eggs
3/4 c. sugar
1/2 tsp. salt
2 tsp. cinnamon (add more spices if you choose)
1 can evaporated milk

Preheat oven to 425 degrees. Beat eggs slightly, then add remaining ingredients and stir. Pour mixture into 9" pie shell and bake for 15 minutes, then reduce heat to 350 degrees and bake for an additional 45 minutes or until done.

It is delicious served with a Cool Whip topping if desired.
