EASY CARAMEL ICING 
1/2 c. butter
1 c. brown sugar, packed
1/4 c. milk
1 3/4 to 2 c. sifted confectioners' sugar

Melt butter in saucepan. Add brown sugar. Boil over low heat for 2 minutes, stirring constantly. Stir in milk. Bring to boil, stirring constantly. Cool to lukewarm. Gradually add sugar. Beat until thick enough to spread. Add a little hot water, if needed.

Just tried the real simple caramel icing but decided to change it. Before I added the confectioner sugar the icing was just too sweet. So, I added a bit of lime, skipped the confectioner and drizzled it across the cake. BAM!!!

This was simple, simple, and tasted great! Finishes off with a slightly hardened glaze. It was perfect on the apple cake I made. I didn't measure the powdered sugar, I just eyed it, so it appears it is slightly forgiving too. This one is a keeper.

I just made this and it is AMAZING. I did add some vanilla extract after I added the milk, because I like adding vanilla to things. I also ended up adding an extra 3/4 of powdered sugar to make it more of a thick, frosting consistency. It is so good.

Wonderful. I used 1/4 cup sweetened condensed milk plus 1/4 cup water to add a little extra to it, and then sprinkled flaked sea salt over the top of the frosted cupcakes. Thanks so much for this recipe. I was at a real loss finding one. This is just what I was looking for.

Icing turned out great ... I did add a little of vanilla to the recipe. Also, after using both light brown sugar and dark brown sugar, I prefer the light brown because the dark brown has a bitter aftertaste. Overall great!!
