SAVORY STUFFED TOMATOES | |
6 sm. tomatoes 3/4 lb. smoked ham 1 c. spinach leaves, washed and cut into thin ribbons 2 tbsp. mayonnaise 2 tbsp. low fat plain yogurt Dash basil 1/3 lb (or more) low fat smoked Mozzarella or Provolone, grated Cut off the tops of the tomatoes. With a spoon, carefully hollow out the insides. Turn them upside down to drain. Cut the smoked ham into 1 inch long strips. Combine them in a large mixing bowl with the spinach, mayonnaise, yogurt, basil; add 2/3 of the cheese. Stuff the tomatoes with the ham mixture. Sprinkle remaining cheese on top. Bake in a preheated 350 degree oven until cheese melts, about 10 - 15 minutes. Serve at room temperature. |
