NO STICK ROLLED BUTTER COOKIES | |
Here's a no-fail recipe that has won several blue ribbons. 4 c. flour (more or less, as needed) 1 tsp. baking soda 2 tsp. cream of tartar 1 c. butter 2 eggs 1 c. sugar 1 tsp. vanilla sugar Sift together flour, baking soda and cream of tartar into bowl. Cut in butter until mixture is crumbly using pastry blender. Beat eggs, 1 cup sugar and vanilla in another bowl until well blended using rotary beater. Stir egg mixture into crumb mixture mixing until blended. Cover and chill in refrigerator for 15 minutes. Divide dough into 4 equal pieces. Roll out each fourth of dough on a lightly floured surface to 1/8 inch thickness. Cut with floured 2 inch round cookie cutter. Place rounds 2 inches apart on greased baking sheets. Sprinkle each with sugar. Bake in 350°F oven 10 minutes, or until golden brown. Remove from baking sheets; cool on racks. Makes 4 dozen. |
