EASY JAMBALAYA | |
1 stick andouille, sliced 1 lb. hot sausage, sliced 1 lb. ham, in chunks 1 lb. turkey, in chunks 3 white onions, chopped fine 1/2 c. celery, chopped fine 1/2 c. green pepper, chopped fine 1 c. green onion, chopped fine 1 c. parsley, chopped 2 tbsp. Tabasco 4 oz. tomato paste 1/2 tsp. pepper 3 c. rice 6 c. water Saute andouille, sausage and ham in a heavy pot. Remove meat. Add white onions to the hot drippings and brown them. Pour off excess fat. Add everything else except rice. Bring to a boil. Let simmer for 15 minutes. Replace water to previous level. Add rice. Simmer covered for 15 minutes. Fold - do not stir. Turn off fire after 15 minutes. Keep covered and let sit for 15 minutes. Serve. |
