RUSSIAN CHICKEN 
8-10 chicken pieces
1 jar apricot preserves (or apricot-pineapple preserves)
1 bottle Russian salad dressing
1 env. dry onion soup mix

Mix preserves and salad dressing together and pour over chicken pieces in a baking dish. Bake at 350 degrees for 1 hour, basting once or twice so that tops of chicken pieces don't burn. During last 15 minutes of cooking time, sprinkle onion soup mix over pieces and baste so that soup mix doesn't burn on top of chicken pieces. Serve over rice.
