DELI-STYLE HEALTH SALAD 
1 c. coarsely chopped green cabbage
1 med. tomato, cut into 8 wedges
1/2 med. cucumber, pared and thinly sliced
2 tbsp. cider vinegar
2 tsp. vegetable oil
Dash of salt
Dash of pepper
Dash of garlic powder
Dash of granulated sugar substitute

In medium salad bowl, combine all ingredients, mixing thoroughly. Cover and refrigerate at least 1 hour. May be refrigerated overnight. Just before serving, sprinkle with parsley.
