HEALTH SALAD 
1 c. grated carrots
1/2 c. grated young raw beets
1 c. grated zucchini
1 c. grated cucumber
4 tbsp. finely chopped red onion
Salt
2 bunches watercress, washed, dried
1 1/2 c. raw cauliflowerettes
2 c. cherry tomatoes
1 recipe yogurt dressing
1 c. alfalfa sprouts

Combine carrots, beets, zucchini, cucumber and onion in a bowl and toss to mix. Salt to taste. Make a bed of watercress. Pile the mixed grated vegetables in the center and arrange the cauliflower and cherry tomatoes around them. Spoon some of the dressing over the top and pass the remainder. Sprinkle sprouts on top.
