HEALTH SALAD 
1 sm. head of cabbage, grated fine
1/2 red pepper, diced fine
1/2 green pepper, diced fine
2 stalks celery, diced fine
1/4 sweet onion, diced fine
1/4 c. Bread and Butter Pickle, minced fine, plus the juice
1/2 tsp. celery seed
1 lg. or 2 sm. carrots, diced fine
3/4 c. cider vinegar
1/2 c. water
Sugar

Mix cider vinegar and water. Add enough sugar to make it sweet and sour. Add salt and pepper to taste. Pour over all vegetables in a snap lid bowl. Mix well. This keeps well and is delicious with roast beef or sandwiches.
