HAMBURGER SAUSAGE 
5 lb. hamburger
5 tsp. Morton's Tender Quick
2 tbsp. coarse ground pepper (1 tbsp. reg. pepper)
2 1/2 tsp. garlic powder
1 tbsp. Hickory Smoke Salt (Liquid Smoke may be substituted)

Mix all ingredients in a large bowl and refrigerate. Each day for three days remove from refrigerator and mix well. On third day, form the mixture into 5 loaves and place on rack in broiler pan. Bake at 140 degrees or lowest oven temperature on bottom rack of oven for 4 hours. Turn loaves and bake 4 more hours. Do not cook at higher temperature.
