SHRIMP DE JONGHE | |
2 lbs. shrimp, cleaned, cooked, and shelled 4-5 cloves garlic, sliced 1 c. (2 sticks) butter 1/4 tsp. tarragon 1/4 tsp. minced parsley 1/4 tsp. shallot 1/4 tsp. minced onion 2 tsp. salt 1/4 tsp. pepper Dash nutmeg Dash mace Dash thyme 1/2 c. cooking sherry or consomme 1 c. dry bread crumbs Preheat oven to 400 degrees. Place shrimp in 8 individual baking dishes. Cook garlic in butter until butter browns; remove garlic. Add herbs, seasonings, and cooking sherry or consomme to butter. Remove 1/4 cup butter mixture and toss with bread crumbs. Pour remaining butter mixture over shrimp. Top with buttered crumbs. Bake 15 minutes. |
