HAM PINEAPPLE RINGS 
1 lb. ground cooked ham
1 lb. ground pork
1 1/2 c. fresh bread crumbs
2 eggs beaten
1 c. milk
2 (8 1/4 oz.) can pineapple slices
3/4 c. brown sugar, packed
1/4 c. vinegar
1/2 tsp. dry mustard
1/2 c. shredded Cheddar cheese

Combine ham, pork, crumbs, eggs, milk; mix lightly. Drain pineapple; reserve 1/4 cup juice. Divide mixture into 8 equal portions and shape each portion into 2 patties. Place 1 pineapple slice between 2 patties, seal all around edge. Punch hole in center with finger. Place on broiler pan. Combine brown sugar, vinegar, juice, mustard. Blend well. Baste ham rings with sauce. Broil 9 inches from heat 15 minutes; baste twice. Turn. Broil 15 minutes on other side, basting twice. Top with cheese. Broil until cheese is melted.
