NEW YORK CHEESECAKE 
1/3 c. sugar
1 1/4 c. graham crumbs
1/4 - 1/2 c. melted butter
16 oz. cream cheese
1 c. sugar
1 tsp. vanilla
1 c. sour cream
1 tsp. lemon juice
5 lg. eggs, separated
Strawberries (optional)

Preheat oven to 350 degrees. Mix sugar, butter, and graham crumbs. Press into a 9 inch spring-form pan (bottom and sides). Beat cream cheese and sugar. Add five egg yolks, vanilla, lemon juice, and sour cream. Mix well. Fold in five stiffly beaten egg whites. Bake 1 hour. Turn off heat and leave in oven one hour with door shut. Open door but leave in 30 minutes longer. Chill overnight.

Note: Either make berries into puree or place in center.
