PROTEIN PLUS MUFFINS 
1 1/4 c. soy flour
2/3 c. nonfat dry milk
2 tsp. baking powder
1/2 tsp. salt
1/2 chopped pitted dates
1/4 c. chopped walnuts
2 eggs, slightly beaten
1 tsp. grated orange peel
3/4 c. orange juice
2 tbsp. honey
2 tbsp. cooking oil

Preheat oven to 350 degrees. In mixing bowl stir soy flour, nonfat dry milk, baking powder, and salt together thoroughly. Stir in the chopped dates and chopped walnuts. Combine the eggs, grated orange peel, orange juice, honey, and cooking oil. Stir the egg mixture into the dry ingredients just until moistened. Grease muffin pan and fill. Bake at 350 degrees for 30 minutes.
