PUMPKIN SPICE COOKIES 
1 pkg. (18.5 oz.) yellow cake mix
1/2 c. quick cooking oats
2 tsp. pumpkin pie spice
1 can (16 oz.) cooked pumpkin
2 tbsp. oil
1 egg, slightly beaten

Heat oven to 350°F. Lightly grease cookie sheets. In large bowl, combine all cookie ingredients; mix until well blended. Drop dough by 1/4 cupfuls onto cookie sheets, spread to 3-inch circle with back of spoon.

Bake 14-20 minutes or until edges are light golden brown. Immediately remove and cool on wire rack.

ORANGE FROSTING:

3 c. powdered sugar
2 tsp. grated orange peel
3-4 tbsp. orange juice

Combine all frosting ingredients, adding enough orange juice to reach proper spreading consistency. Frost cooled cookies. Decorate with candy corn and raisins, if desired.

Variation: For the frosting, replace orange with lemon.

Makes about 18 cookies.
