TUNA TOMATO CASSEROLE 
1 c. tuna fish
1/2 c. fine cracker crumbs
3 medium tomatoes, peeled
1/2 tsp. salt
1/8 tsp. pepper
1 tbsp. butter
2 tbsp. water

Drain tuna fish and mix the liquid with the cracker crumbs. Sprinkle 1 tablespoon of the crumb mixture in bottom greased casserole. Fill casserole with alternate layers of flaked tuna fish, thinly sliced tomatoes, and remaining crumb mixture. Season with salt and pepper. Top with rind of sliced tomatoes. Dot with butter. Sprinkle with water. Bake at 400 degrees for 30 minutes.
