OPERA HOUSE COOKIES 
2 egg whites
3/4 c. granulated sugar
1/2 tsp. vanilla
6 oz. semi sweet chocolate chips
1 c. chopped pecans (or black walnut meats)

Set oven at 350 degrees. Beat egg whites until stiff but not dry. Slowly add sugar and vanilla. Beat 5 minutes at high speed on electric beater. Fold in chocolate chips and pecans. Drop onto foil-lined cookie sheet using small ice cream scoop. Bake for 15 to 20 minutes. Turn oven off and leave overnight. Freezes well.
