CASHEW CRUNCH COOKIES 
1 c. butter, softened
3/4 c. brown sugar, firmly packed
1/2 c. sugar
1 egg
1 tsp. vanilla
2 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1 1/2 c. cashews, finely chopped

Beat butter at medium speed. Gradually add sugars, mix well. Add egg and vanilla, beat. Combine flour, soda, cream of tartar. Gradually add to creamed mixture. Stir in cashews. Drop by teaspoon onto lightly greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Makes 7 dozen.
