MEXICAN DEVILED EGGS 
8 hard-cooked eggs
1/2 c. shredded Cheddar cheese
1/4 c. salsa
1/4 c. mayonnaise
2 tbsp. sliced green onion
1 tbsp. sour cream
salt and pepper to taste

Slice the eggs in half lengthwise. Remove the yolks and set whites aside. In a small bowl, mash yolks with cheese, salsa, mayonnaise, onions, sour cream, salt and pepper. Evenly fill the egg whites with mixture. Refrigerate until ready to serve.
