PUMPKIN COOKIES | |
1 cup pumpkin 3 1/4 cups all-purpose flour (sifted) 3/4 tsp. baking soda 1 3/4 tsp. pumpkin pie spice 1/2 tsp. salt 1 cup (2 sticks) butter, softened 2 1/4 cups sugar 1/2 cup maple syrup 2 medium eggs (or 1 large egg) 1 tsp. vanilla extract Preheat oven to 350°F. Sift together flour, baking soda, pumpkin pie spice and salt. Set aside. Cream butter with sugar until fluffy, about 3 minutes. Stir in maple syrup and mix in eggs one at a time, stirring thoroughly after each addition. Stir in vanilla. Add dry mixture in 3 parts, mixing thoroughly after each addition. Mix in pumpkin until well blended. Drop walnut-sized lumps of dough in sugar and roll them to coat then place on cookie tray about 2-inches apart. Bake at 350°F for about 14 minutes or until lightly browned. Note: Dough can be frozen. Submitted by: Katherine K. |
