NO EGG PUMPKIN COOKIES 
NO EGGS needed in these moist, soft cookies.

1 c. brown sugar, packed
1 c. pumpkin
1/2 c. oil
1 tsp. vanilla
2 c. sifted flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. each salt, cinnamon & nutmeg
1/4 tsp. ground ginger
1 c. raisins
1/2 c. chopped nuts

In mixing bowl beat together sugar, pumpkin, oil and vanilla. Sift together dry ingredients; add and stir until smooth. Blend in raisins and nuts. Drop by teaspoon on greased baking sheet.

Bake at 350°F for 12 to 15 minutes. Makes 3 to 4 dozen.

These were wonderful and I dont even like pumpkin, I made them for my son and he kept raving about them so I tried one. Super duper as he says. The only thing I did different was to dust them with powered sugar.

I didn't sift the flour. I used salted butter instead of oil and salt (I still added a little oil). I didn't have nutmeg, ginger, raisins, vanilla, or nuts. Instead I used a packet of maple instant oatmeal. I added an extra 3/4 cup pumpkin, and a lot of extra brown sugar and granulated white sugar. I added a little extra flour, and baking powder to make up for the extra sugars and pumpkin.

I know it seems like I didn't follow the instructions at all, but without the recipe I wouldn't have known what goes into these cookies. That being said, they're great!

Wow! I loved these cookies! I found the recipe one night after my husband had a late night craving for something sweet. Of course I didn't have all of the ingredients, but they still came out perfectly delicious. I can't wait to try them with all the proper ingredients!

These are super soft and pillowy. I omitted the nuts (nut allergy) and added a little extra pumpkin and two tablespoons of maple syrup. Almost cake-like, but very tasty.

Really good! I used craisins and they worked well. These cookies would be a good breakfast option with a side of fruit or yogurt, etc.

I liked this recipe and it took a little longer than 12 minutes for me. Its about 20 minutes for the pumpkin to cook.
