SWEET POTATO SOUFFLE 
3 c. cooked, mashed sweet potatoes
2/3 c. sugar
1/2 tsp. salt
1/3 stick butter
1/2 c. milk
1 tsp. vanilla
2 eggs
1 c. brown sugar
1/3 c. flour
1/3 stick butter
1 c. chopped nuts

Mix together first 6 ingredients. Put into greased casserole. Cover with topping.

To make topping, mix together brown sugar, flour, butter and nuts.

Bake at 350°F for 35 minutes.

Serves 8 to 10.

Freezes well (before cooked).
